做(zuò )法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半(bàn )掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
